A little mango makes everything…just…Happier!

I am Hooked on Mango’s lately…and try them in everything!

Including Guacamole!

Yep….marry the smooth creamy green with the ripe orangey-gold…

Whats for dinner?

Why…I’m glad you asked.

Grilled Snapper with a wonderful smoked paprika and cumin rub…with corn salsa, fresh tomatillo sauce and Mango guacamole…all piled high on a corn tostada with a key lime remoulade sauce.

Easy Peasy puddin’ and pie!

Start by adding some diced mango to your favorite Guacamole recipe.

MY fave guac recipe has chopped scallions, cilantro jalapenos, sea salt…

Add the mango. The sweet with the bite of pepper is sublime.

Corn salsa with fresh corn…find the recipe here.

I add some yogurt…just a dab…for creaminess.

This is great all by itself...actually everything here is great

all by itself!

Tomatillos…those husky little green tomato looking creatures.

Husk ‘em, roast ‘em in the oven with some hot peppers Jalapeno, cubano

...whatever fits on your dance card

When they are soft and roasted…pop ‘em in the blender with a nice handful of cilantro

trust.

It is green…healthy…good for yaand will add a touch of spice to your friday.

Now...Mix up some Key Lime sauce, Baby!

1/2 cup mayonnaise
1/2 teaspoon garlic, minced
1/2 teaspoon Dijon mustard
1/2 teaspoon lime zest
1 1/4 tablespoons lime juice
1 tablespoon sugar
salt and pepper to taste

Stack everything on a friendly corn tostada….

Love mango. So far I blended it with ice for a tasty drink. Not very creative, hmmm, but that might change now..., only that my husband doesn't like mango at all, hard to believe..., so got to keep the mango away from him.

Wow - this looks like all of the flavors that I love - avocado, lime, tomatillos, the list goes on and on! I must admit, though, that I have never tried mango in guacamole...I do have some avocados and some mango in the fruit bowl...might just have to whip something together for lunch!

TRY IT! I'm telling you it is a marvellous marriage!

Struggler...I find the easiest way to cut Mr. Mango is to cut it straight down on each side of the big seed. Then dice (lke the pic I showed) then turn that diced piece inside out and cut it from the skin with a paring knife.

Desiree...I use my nose to tell if it is ripe. It should smell slightly fruity at the stem end...and not to firm...a little giving to touch.

Oh Lisa...I was worried about these pics so NOT being 7:00 am pictures! Or appealing at any time! Thanks!!

All looks so wonderful ...years ago I made mango salsa for mom's 80th birthday party and her friends asked if it was corn relish .....little generation gap.

Hating mango today. Really hating it. Daughter #2 returned last night from a Puerto Rico vacation, teary eyed, her face puffy, covered in nasty, painful red bumps. She's allergic to mango skins. I'm hating mango today, really.

When I first lived in Miami, after living in PA, OH, and DC, my roommate had the following growing in her yard:

mangoes, oranges, avocados, and probably one other that I can't remember.

I'd never seen anything like it and every time I've moved away from south florida, I have returned... ;)

actually a week or so ago when we dropped a friend off at the Miami airport, we saw tons of sky high trees absolutely loaded up with these gorgeous purple jewels of fruit...mangoes getting ready to change color... it makes one go poetic... ;)

i love mango...it's rather expensive here (surprisingly, yes, in the caribbean, but a lucky few have mango trees in their yard).

Yum, Yum, YUM! My husband loves mangoes and I love quacamole! Sounds like the perfect thing for us. I'm planning on making fajitas at some point this weekend, and all of this sounds like the perfect thing to go along with them. Thanks for the recipes!

Love the color and I have to have lots of color for me to eat foods so this looks wonderful. Oh and the exception is chocolate..the color is dull but I force myself to eat it every day:)

OHGosh! I am still laughing at your comment on my blog! I LOVE your plant names!!! Once I did poison a tiny little seedling tree that hubby planted where I did not want a tree...he kept saying for weeks, why is that tree dying? So I do have a dark side...

Update on Daughter #2's Mango allergy. She got an actual same day appointment with the dermatologist (you have to be a little lucky to ge one in the same decade). Got a cortisone shot in the behind. She'll start getting better pretty soon. His advice: get somebody else to peel them.

Turns out that all her vacation girl buds were eating mangos on the bus, using their teeth to peel them. Didn't turn out so hot for my girl.

I'll see tomorrow. A gaggle of daughters and buds are coming over for the "So you think you can dance" they missed this week. I going to check out her rash and leave the country before they start playback.

I carry big grudges for things that hurt my children. I know you do too. Mangos have some big time sucking up to do at my place.

I am a big guacamole fan here in San DIego-I will have to try adding the mango...another great treat is a MANGO MARGARITA OR MANGO DAQUIRI to sip along with your chips and guacamole!

OMG... your photos, this food--- your KILLIN' me. Now, you 'know' I can't find good Mexican food here. I think you're doing this to be mean to ME! Did my sister tell you to do this?!!! (she sent me a menu and a hot sauce container from my favorite Tex-Mex in Dallas just to torture me! I literally cried!!)
Seriously... gorgeous post; love the idea of mango in the guac! Guess I'm gonna have to learn how to make Mexican food. Thanks for all the recipes!

Mmmmm, that looks so good! I grilled mango for the first time last night. Just cut the two cheeks off the side, scored it, added some canola oil and salt and threw it on the grill. Was a fabulous side to grilled salmon.
