I am Hooked on Mango’s lately…and try them in everything!
Including Guacamole!
Yep….marry the smooth creamy green with the ripe orangey-gold…
Nectar of the Gods I tell ya!
there he is on the bottom left. He’s shy…even blushing
Whats for dinner?
Why…I’m glad you asked.
Grilled Snapper with a wonderful smoked paprika and cumin rub…with corn salsa, fresh tomatillo sauce and Mango guacamole…all piled high on a corn tostada with a key lime remoulade sauce.
Easy Peasy puddin’ and pie!
Start by adding some diced mango to your favorite Guacamole recipe.
MY fave guac recipe has chopped scallions, cilantro jalapenos, sea salt…
Add the mango. The sweet with the bite of pepper is sublime.
Truly.
Corn salsa with fresh corn…find the recipe here.
I add some yogurt…just a dab…for creaminess.
This is great all by itself...actually everything here is great
all by itself!
Tomatillos…those husky little green tomato looking creatures.
Husk ‘em, roast ‘em in the oven with some hot peppers Jalapeno, cubano
...whatever fits on your dance card
When they are soft and roasted…pop ‘em in the blender with a nice handful of cilantro
trust.
It is green…healthy…good for ya… and will add a touch of spice to your friday.
Now...Mix up some Key Lime sauce, Baby!
1/2 cup mayonnaise
1/2 teaspoon garlic, minced
1/2 teaspoon Dijon mustard
1/2 teaspoon lime zest
1 1/4 tablespoons lime juice
1 tablespoon sugar
salt and pepper to taste
Stack everything on a friendly corn tostada….
Yum….really.
Would I lead you astray?
I think not.

I never would have thought to add mango to guacamole. I'm going to try that :-)

You made this look really easy!
Am I the only one to get in a total mess with tackling Mr Mango? Or is that part of the fun?!
Love mango. So far I blended it with ice for a tasty drink. Not very creative, hmmm, but that might change now..., only that my husband doesn't like mango at all, hard to believe..., so got to keep the mango away from him.
I love Mango, but have never purchased because sadly I don't know how to tell if the Mango is ripe/perfect for purchasing...any tips???
love love love mango and your post...wanted to eat the screen!!
Yum! Beatiful photos too!
Wow - this looks like all of the flavors that I love - avocado, lime, tomatillos, the list goes on and on! I must admit, though, that I have never tried mango in guacamole...I do have some avocados and some mango in the fruit bowl...might just have to whip something together for lunch!
Oh Linda - I am already craving those flavors and it's only 7 am!! Yummmyyyy :)
whoa !
yummo linda !
try the mango with fish...
it is divine ( grouper)
xx
TRY IT! I'm telling you it is a marvellous marriage!
Struggler...I find the easiest way to cut Mr. Mango is to cut it straight down on each side of the big seed. Then dice (lke the pic I showed) then turn that diced piece inside out and cut it from the skin with a paring knife.
Desiree...I use my nose to tell if it is ripe. It should smell slightly fruity at the stem end...and not to firm...a little giving to touch.
Oh Lisa...I was worried about these pics so NOT being 7:00 am pictures! Or appealing at any time! Thanks!!
I haven't had a mango in quite a long time but your description really made me want to run to the farmer's market/ grocery store and buy an arm load!
I am running to get my index cards!! This all looks delicious and I love anything with avocado!--not always a mango fan, but willing to try and I know my family will like it.
All looks so wonderful ...years ago I made mango salsa for mom's 80th birthday party and her friends asked if it was corn relish .....little generation gap.
Ummm.... looks SO good! Mango in guacamole? We may need to try this, sounds great for summer!
Of course that means I have to wrestle with a mango. Not pretty.
Your blog is stunning! I love to visit. Thanks!
Cass
Sounds lovely! A great dish to try on those "too hot to cook" days. Thanks for sharing this with us. I love mangoes, too!
could not agree with you more! mangoes are a staple in my casita. Your pictures are so scrumptious, I kept trying to go through the screen for bites, but no go! were you ever a food stylist? i love this spread!
good day to mango mama :)
What time is dinner?Should I bring anything?
Happy Friday, Linda! You have won my bamboo sheet give-away! If you can just send me the address you want the sheets mailed to, I will make sure they get sent. Thanks and have a great weekend!
everything looks so yummmy... I never would have thought to add mangos... I am going to have to pick up a few and add them to a few things!Happy Foodie Friday! Have a great weekend ~ Susan
The corn salsa looks divine! Will have to try out the mango guac - I bet it'd be great over grilled fish!
Thanks for sharing, and happy FF!
Ok your killing me here, that is my kind of meal!!! Super yum. Can I come over for dinner?
Hating mango today. Really hating it. Daughter #2 returned last night from a Puerto Rico vacation, teary eyed, her face puffy, covered in nasty, painful red bumps. She's allergic to mango skins. I'm hating mango today, really.
Linda, you truly rock.
this post includes many things that make my world and life so good!!!
Lime, mango, avocado... my kind of thing!
When I first lived in Miami, after living in PA, OH, and DC, my roommate had the following growing in her yard:
mangoes, oranges, avocados, and probably one other that I can't remember.
I'd never seen anything like it and every time I've moved away from south florida, I have returned... ;)
Enjoy the weekend and thanks for your joyful blog.
actually a week or so ago when we dropped a friend off at the Miami airport, we saw tons of sky high trees absolutely loaded up with these gorgeous purple jewels of fruit...mangoes getting ready to change color... it makes one go poetic... ;)
All your photos are so perfect that I couldn't pick a favorite if I had to.
Hey does your Mom want a roommate in the casita?? :) Or is there a house for rent in the neighborhood? You may find a blonde woman on your corner w/ a sign in her hand..."Will give massage for GREAT food" :)...oh & maybe a margarita......
I have definitely saved this recipe idea in my recipe file!!!
I have two ripe mangos in the refrigerator and instead of putting them in a fruit salad... you have given me new ideas for their use. Thanks! Ymmm!
Just great. I am now abandoning work and running to the grocery store and making this for breakfast. Beautiful photos! Happy Friday!!! **blows kisses** Deborah
Linda,
i believe you...it sounds like a wonderful marriage!
thank you for this summery refreshing inspiration!
:-)
Thanks for the mango-tackling tips, Linda. I will have another try!
ohhh I am so excited to try the guac and corn salsa!!! looks delicious!!
i love mango...it's rather expensive here (surprisingly, yes, in the caribbean, but a lucky few have mango trees in their yard).
your recipes look delightful! i must try the guacamole!
Oh my gosh that looks amazing! Fresh mango may be a little tough to find in Missouri but for that I will work on it!
Amazing! I'll be right over for dinner. The best part is that it's healthy. I will have to try this soon! Head on over to my blog and browse a while, if you like what you see, click the "follow" button on the right so we can inspire one another often!
This is incredible Linda - you are amazing and I want to have that for dinner tonight, love, love mangoes and the rest...Happy weekend, xv.
Yum, Yum, YUM! My husband loves mangoes and I love quacamole! Sounds like the perfect thing for us. I'm planning on making fajitas at some point this weekend, and all of this sounds like the perfect thing to go along with them. Thanks for the recipes!
Oh my heavens - I know where I'm coming for supper. Have an extra seat at the table? :)
GET TOTALLY OUT!
add 5 extra chairs to the table, we're on our way..smooth talker, and a little bit of a tease today, arent we?
Ill bring the 'ritas...

xxoo
Looks delicious, and great pics too!
Yum, yum, yum! I am craving a tostada, guac & some mango! Have 2 of the 3 at the ready. That looks so yummy.
Love the color and I have to have lots of color for me to eat foods so this looks wonderful. Oh and the exception is chocolate..the color is dull but I force myself to eat it every day:)
Oh that looks fantastic!!!!
My daughter would love this (mango). Thanks for sharing.
OHGosh! I am still laughing at your comment on my blog! I LOVE your plant names!!! Once I did poison a tiny little seedling tree that hubby planted where I did not want a tree...he kept saying for weeks, why is that tree dying? So I do have a dark side...
As a LOVER of mago I have GOT to try this!! Sounds SOOOO good!!!! Pinky
the ocean view is from a beach on Jekyll Island. So, kind of close to FL~ :)
Update on Daughter #2's Mango allergy. She got an actual same day appointment with the dermatologist (you have to be a little lucky to ge one in the same decade). Got a cortisone shot in the behind. She'll start getting better pretty soon. His advice: get somebody else to peel them.
Turns out that all her vacation girl buds were eating mangos on the bus, using their teeth to peel them. Didn't turn out so hot for my girl.
I'll see tomorrow. A gaggle of daughters and buds are coming over for the "So you think you can dance" they missed this week. I going to check out her rash and leave the country before they start playback.
I carry big grudges for things that hurt my children. I know you do too. Mangos have some big time sucking up to do at my place.
Good Morning Linda,
I nominated you for an award on my blog today. I have really enjoyed seeing what lovely images you are going to post from day to day. If you don't pass it on that's ok. I just wanted you to know you were wonderful.
Hope you have a great weekend.
Becky
Yummmmm.... :)
Everything looks so fresh and healthy...
I am not a mango person but my mouth is watering!
Yummilicious, Linda!!
Linda, so happy you enjoyed my post on Floral Design Tips! I, too, love flowers.
I am a big guacamole fan here in San DIego-I will have to try adding the mango...another great treat is a MANGO MARGARITA OR MANGO DAQUIRI to sip along with your chips and guacamole!
mmmm I love mangos too and mango guacamole is the BEST!!
I have been addicted to mango's here lately too and that looks real yummy!!!
a stray?
I think not
as you know about putting
the lime in the coconut
and all...
:-)
{{ if only you delivered }}
I wasn't a big mango fan - until we moved to Brazil - they are absolutely divine down there! I'm happy to say I'm converted!
Gorgeous (and yummy) pics!
OMG... your photos, this food--- your KILLIN' me. Now, you 'know' I can't find good Mexican food here. I think you're doing this to be mean to ME! Did my sister tell you to do this?!!! (she sent me a menu and a hot sauce container from my favorite Tex-Mex in Dallas just to torture me! I literally cried!!)
Seriously... gorgeous post; love the idea of mango in the guac! Guess I'm gonna have to learn how to make Mexican food. Thanks for all the recipes!
joan
Yummy beyond. Also the imagery is fantastic! Mango's are sooo good!
Oh my goodness! That's look delicious! You have a mortar and pestle too? I've been told that freezing mangoes is delicious also...
What vivid beautiful pictures!
Linda, Because of you i bought a bunch of manoes this weekend. :)
Oh no I missed dinner!!! This looks so... good. Hmmm... I planted a Tomatillos and it is growing like a weed. I found a yellow flower on it today. I had no clue what to with them. Now I do. xoxo
That looks fabulous! I'm off to start clicking links and making out a grocery list. Looks like the perfect dinner for tonight.
You rock! :)
Mmmmm, that looks so good! I grilled mango for the first time last night. Just cut the two cheeks off the side, scored it, added some canola oil and salt and threw it on the grill. Was a fabulous side to grilled salmon.
Yummy yummy in my tummy!
xo Isa
I am trying this out, man! This looks FANTASTIC :)
